Background Recipe story & origin
Tarte Tatin was allegedly created by accident at the Hotel Tatin in Lamotte-Beuvron, France, in the 1880s-1890s. The story claims Stéphanie Tatin was making apple tart but forgot the pastry base, later adding it on top of the apples and inverting after baking. Whether the origin story is true or marketing legend, the upside-down caramelized apple tart became a French classic. The technique cooks apples in butter and sugar until deeply caramelized, covers them with pastry, bakes until golden, then inverts to reveal glossy, mahogany apples atop crisp pastry. The dish spread from the Loire Valley to Parisian restaurants and eventually worldwide. Tarte Tatin represents French dessert traditions and the happy accident mythology that surrounds many iconic dishes. Proper Tatin requires patience-the apples must caramelize deeply, the pastry must be crisp, the inversion must be confident.
