Background Recipe story & origin

A seared scallop - golden crust, tender center, brown butter.

Well seared scallops are a test of technique found on menus from French bistros to American steakhouses. The goal is a deeply golden crust that forms from the Maillard reaction while the interior remains tender and slightly translucent. The technique requires dry scallops (wet-packed scallops are treated with chemicals that prevent browning), a screaming hot pan, and restraint - the scallops must not be moved until they release naturally. Brown butter, made by cooking butter until the milk solids toast, adds nutty depth. A squeeze of lemon provides brightness.

Before you start Equipment you'll need
  • stainless steel or cast iron skillet — Provides high even heat for searing scallops to golden crust without overcooking
Safety Safety & allergen notes
  • Scallops release moisture; hot oil will splatter.
  • Do not move scallops while searing.
  • Brown butter can burn quickly; watch carefully.
Non-negotiables Rules for success
  • Pat scallops completely dry.

Wet scallops steam instead of sear; you need bone-dry surface

  • Use high heat.

Pan must be smoking hot to create golden crust before overcooking interior

  • Do not move or flip too early.

Moving prevents crust formation; wait until scallop releases naturally

  • Do not overcook.

Overcooked scallops are rubbery; centers should be slightly translucent

Prep Get set first

About 8 min of prep

  • Remove side muscle from scallops
  • Pat scallops very dry
  • Let scallops come to room temperature
  • Heat pan until smoking
  • Have butter ready

Perfect scallops require two things: very dry scallops and a very hot pan. Do not skip the drying step.

Instructions

  1. Prep the scallops

Remove side muscle from each scallop. Pat scallops very dry with a clean kitchen towel on all sides. Season with salt and pepper. Let sit at room temperature 5 minutes.

    Ingredients

    • 1.5 lb scallops
    • ¾ tsp salt
    • ¼ tsp pepper
  2. Sear the scallops

Heat oil in skillet over high heat (400-450°F surface) until smoking. Place scallops in pan, leaving space between each. Do not move. Sear 2 minutes until deep golden crust forms. Flip and sear 1 to 1.5 minutes more. Remove to plate.

    Equipment

    • stainless steel or cast iron skillet

    Ingredients

    • 2 tbsp vegetable oil
  3. Make the brown butter and serve

Reduce heat to medium. Add butter to same pan. Cook, swirling, until butter turns amber and smells nutty, about 2 minutes. Remove from heat. Squeeze lemon juice into butter. Spoon brown butter over scallops. Garnish with parsley. Serve immediately.

    Equipment

    • stainless steel or cast iron skillet

    Ingredients

    • 3 tbsp butter
    • 1 whole lemon juice
    • 2 tbsp parsley

Chef's notes

Use dry-packed scallops, not wet-packed.

Remove the side muscle; it is tough.

U10 means under 10 per pound - the largest size.

This is the foundation technique for all scallop dishes.
