Break up rice
Break cold rice apart with your hands or fork so no large clumps remain.

Heat the wok and add oil
Set wok over high heat (400-450°F surface) until lightly smoking. Add neutral oil.

Cook the eggs
Pour in beaten eggs. Stir quickly until just set, then push to side of wok.

Add the scallions
Add scallion whites to center of wok and stir fry 20 seconds.

Add rice and toss constantly, pressing it briefly against hot surface to fry.

Turn heat slightly down. Add soy sauce, salt, and pepper. Toss to evenly coat.

Add scallion greens and sesame oil. Toss 10 more seconds.
