The classic version sparks controversy: purists insist on raw vegetables only - tomatoes, radishes, spring onions, fava beans, artichokes - with anchovies (not tuna), hard-boiled eggs, and Niçoise olives. Cooked vegetables (potatoes, green beans) are Parisian additions, considered inauthentic in Nice. The dressing is simple: olive oil, maybe a splash of vinegar. The salad is arranged, not tossed - each component visible. Tuna (canned or seared) became standard in international versions but isn't Niçoise tradition. The dish represents Nice's unique position between French and Italian influences and the Côte d'Azur's dedication to fresh produce. Debates about 'authentic' niçoise continue; the purist position rejects cooked vegetables fully.

  1. Prep the vegetables

    Boil small potatoes until tender, about 15 minutes. Cool and quarter. Blanch green beans 3 minutes until crisp-tender, shock in ice water. Quarter tomatoes. Slice cucumber. Thinly slice red onion.

    • 4 large hard-boiled eggs

    Place eggs in cold water, bring to boil, turn off heat, cover 10 minutes for jammy yolks. Cool and peel. Quarter.
