Moussaka exists throughout the Eastern Mediterranean and Middle East, but the Greek version - with its distinctive béchamel topping - was codified by Nikolaos Tselementes in the 1920s-30s. Tselementes, trained in French cuisine, sought to refine Greek cooking with French techniques, adding the béchamel layer that distinguishes Greek moussaka from Arab and Turkish versions. The dish layers fried eggplant (sometimes with potatoes), spiced ground meat (lamb traditionally), tomato sauce, and creamy béchamel, then baked until golden. Earlier moussaka versions existed without béchamel - the Arab 'musaqqa'a' is a simpler eggplant and tomato dish. The name comes from Arabic 'musaqqaʿa' meaning moistened. Greek moussaka became a symbol of taverna cooking, served at room temperature or warm. The dish represents the synthesis of Ottoman-era traditions with French culinary influence in modern Greek cuisine.
