Char the eggplants
Pierce 2 large eggplants with a fork. Char directly over gas flame (or under broiler), turning frequently, until completely collapsed and skin is blackened all over, 15-20 minutes. The flesh inside should be very soft.

Drain and scoop
Place charred eggplants in a colander. Let cool slightly. Cut open and scoop flesh into the colander, discarding skin. Let drain 15 minutes - excess liquid makes the dip watery.

Add drained eggplant to food processor with 2 minced garlic cloves, juice of 1 lemon, and salt. Pulse to desired consistency (chunky or smooth). With motor running, drizzle in 1/4 cup olive oil.
