  1. Prep the calamari

    Slice calamari bodies into 0.5-inch rings. Leave tentacles whole or halve if large. Soak in buttermilk 10 minutes. Mix flour with 1 teaspoon salt, pepper, and garlic powder.

    • 1 cup buttermilk
    • 1.5 cup flour
    • 1 tsp salt
    • ½ tsp pepper
    • ½ tsp garlic powder
  2. Fry and serve

    Heat oil to 375F. Drain calamari, dredge in seasoned flour, shake off excess. Fry in batches 60 to 90 seconds until golden. Drain on wire rack. Season immediately with remaining salt. Pile on warm platter. Serve with marinara, lemon wedges, and parsley.
