  1. Brown the butter

    Melt 10 tablespoons butter in a saucepan over medium heat (325-350°F surface). Continue cooking, swirling occasionally, until butter turns golden brown and smells nutty, about 5 minutes. Watch carefully - it goes from brown to burnt quickly. Pour into a bowl and let cool to room temperature.
