Meat-filled versions exist for warm service. The dish predates Ottoman times, with stuffed vegetables appearing in ancient Persian and Byzantine cooking. Greeks distinguish between 'yalantzi' (meatless, served cold) and meat-stuffed versions. Proper preparation requires blanching fresh leaves (or rinsing preserved ones), creating tight rolls that don't unravel, and gentle poaching. The leaves contribute a slightly tannic, vegetal flavor.   1. Make the filling

    Sauté onion in oil. Add rice, cook 2 minutes. Add herbs, pine nuts, juice of 1 lemon, water. Simmer 10 minutes until water absorbed. Cool.

    Place filling on grape leaf, fold sides, roll tight. Pack snugly in pot lined with extra leaves. Add remaining lemon juice and water. Weight with plate. Simmer 45 minutes. Cool in pot. Serve cold with lemon wedges.
