Before you cook
Background Recipe story & origin
The dish embodies waste-not frugality and the American diner breakfast tradition. Corned beef hash emerged in New England as a way to use leftover corned beef after boiled dinners. The dish combines chopped corned beef with potatoes and onions, pan-fried until crispy. 'Hash' derives from French 'hacher' (to chop). The dish became associated with diners and American breakfast culture by the early 20th century. Canned corned beef hash (Hormel, Libby's) appeared in the early 1900s, making it a pantry staple that sustained soldiers in both World Wars. Proper hash should be crispy on the outside, tender within, served with eggs (poached or fried). The dish represents American working-class food traditions and the immigrant influence on American cooking-corned beef itself was an Irish-American adaptation of Jewish salt-preserved beef. Hash browns (potatoes alone) are a derivative.
