Make the batter
Whisk flour, sugar, baking powder, baking soda, salt, cardamom, cinnamon, ginger, and cloves in a large bowl. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla. Pour wet into dry and stir until just combined - lumps are okay. Let rest 5 minutes.

Cook the pancakes
Heat griddle or large skillet over medium-low heat (275-300°F surface). Add a little butter. Pour 1/4 cup batter per pancake. Cook until bubbles form on surface and edges look set, 2 to 3 minutes. Flip and cook 1 to 2 minutes more until golden. Repeat with remaining batter, adding butter as needed.
