The gravy starts with breakfast sausage crumbled and browned, then thickened with flour and milk to create a peppery, meaty white sauce. Buttermilk biscuits provide the base—their slight tang and tender crumb absorbing the rich gravy. The dish spread throughout the South and became a breakfast staple. Regional variations use different sausage styles; some add cayenne or sage.

  1. Brown the sausage

    Cook 1 lb breakfast sausage in a large skillet over medium heat (325-350°F surface), breaking into crumbles, until browned and cooked through, about 8 minutes. Don't drain the fat.
