    Heat oil in a large pot at 325°F. Add onion and cook until softened, about 5 minutes. Add garlic, ginger, and red curry paste. Cook, stirring, 2 minutes until very fragrant.

  2. Simmer the soup

    Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer 20 to 25 minutes until carrots are very tender.
