Scones originated in Scotland, possibly deriving from Dutch 'schoonbrood' (fine bread) or the Stone of Scone (where Scottish kings were crowned). By the 1500s, scones were Scottish quick breads cooked on griddles. The modern oven-baked scone developed in the 19th century with availability of chemical leaveners. Traditional scones contain flour, butter, milk, and minimal sugar - less sweet than American versions. They're served with clotted cream and jam for afternoon tea, the 'cream tea' being a British institution. Devon and Cornwall dispute the correct order of cream and jam. British scones are smaller and denser than American ones; American scones are often flavored (blueberry, chocolate) and glazed. The dish represents British tea culture and Scottish baking traditions. Proper scones are crumbly yet tender, served warm, split and spread generously with cream.
