Background Recipe story & origin
Dr. Maximilian Bircher-Benner created Bircher muesli around 1900 at his Swiss sanatorium, where he prescribed it for patients. The original includes oats soaked in water (not milk), grated raw apple, lemon juice, condensed milk, and hazelnuts. It predates modern overnight oats by a century. The apple is grated fresh, skin and all, creating a light, fruit-forward dish quite different from sweet American versions.
