Background Recipe story & origin

Smoky Greek eggplant dip.

The dish shows fire's power on vegetables. Melitzanosalata (Greek eggplant dip) is a meze staple, featuring fire-roasted eggplant pureed with garlic, olive oil, and lemon or vinegar. The dish has ancient Mediterranean roots; eggplants arrived via Arab traders and became central to Greek cooking. Traditional preparation chars whole eggplants over open flame or coals until collapsed and smoky, then scrapes out the flesh, discarding bitter skin. The flesh is mashed (not blended, for texture) with garlic, olive oil, and acid. Some versions add parsley, onion, or tomato. The smoke flavor is key - oven-roasted versions lack depth. Melitzanosalata represents Greek meze culture: vegetable-based, olive oil-rich, served with bread at tavernas. It's similar to Middle Eastern baba ganoush but typically tangier and less tahini-dependent (Greek versions rarely use tahini).

Instructions

  1. Char the eggplants

Pierce 2 large eggplants with a fork. Char directly over gas flame (or under broiler), turning frequently, until completely collapsed and skin is blackened all over, 15-20 minutes. The flesh inside should be very soft.

    Equipment

    • grill
    • grill or oven

    Ingredients

    • 2 large eggplants
  2. Drain and scoop

Place charred eggplants in a colander. Let cool slightly. Cut open and scoop flesh into the colander, discarding skin. Let drain 15 minutes - excess liquid makes the dip watery.

    Ingredients

    • 2 cloves garlic
    • 2 tbsp lemon juice
    • ¼ cup olive oil
  3. Blend until smooth

Add drained eggplant to food processor with 2 minced garlic cloves, juice of 1 lemon, and salt. Pulse to desired consistency (chunky or smooth). With motor running, drizzle in 1/4 cup olive oil.

    Ingredients

    • 2 tbsp parsley
  4. Serve with bread

Transfer to a bowl. Drizzle with more olive oil, sprinkle with parsley. Serve with pita bread.
