Madeleines are small French sponge cakes baked in distinctive shell-shaped molds, famously immortalized in Proust's 'In Search of Lost Time' (1913), where a madeleine dipped in tea triggers the narrator's memories. The cakes originated in Commercy, Lorraine, in the 18th century. Various legends attribute their creation to a servant named Madeleine or a pastry cook by that name. King Stanisław of Poland (then ruling Lorraine) supposedly popularized them at Versailles. The batter - eggs, sugar, flour, butter - is simple but requires proper technique: it should rest refrigerated, causing the distinctive 'bump' when baked in hot molds. The shell shape comes from their traditional molds. Madeleines represent French tea-time culture and the intersection of literature and food. They should be slightly crispy outside, tender and lemony inside.
