The dish represents American breakfast's love of crispy potatoes. Two distinct styles exist: shredded (diner-style, like a flat cake) and diced (often called home fries). Shredded hash browns should be golden and crispy outside, tender inside, achieved by squeezing moisture from grated potatoes and cooking in hot fat. The dish became a diner staple, cooked on flat-top griddles alongside eggs. McDonald's introduced dehydrated hash brown patties in 1977, making them a fast-food standard. Waffle House refined hash browns to an art form with their customization system (scattered, smothered, covered, etc.). Hash browns represent American diner culture's simple satisfactions and the ubiquity of potatoes in American breakfast.

  1. Prep the potatoes

    Peel and grate 1.5 lbs russet potatoes using the large holes of a box grater. Place in a clean kitchen towel and squeeze out as much moisture as possible. This is crucial for crispy hash browns.

  2. Season the well

    Toss dried potatoes with salt and pepper.

  3. Eat while hot

    Heat 2 tbsp butter and 2 tbsp oil in a large cast iron or nonstick skillet over medium-high heat (400-450°F surface). Add potatoes, pressing into an even layer. Cook without stirring 5-6 minutes until bottom is golden and crispy. Flip in sections and cook another 4-5 minutes.

  4. Hot and crispy

    Serve immediately while hot and crispy.
