Background Recipe story & origin

Lemon-caper sauce over delicate pan-fried fish.

Piccata originated in Italy as a preparation for veal, featuring a lemon-butter-caper sauce. Italian-American restaurants adapted it for chicken, and eventually fish. The technique is simple: lightly floured protein pan-fried until golden, then a quick pan sauce of white wine, lemon juice, capers, and butter. The sauce should be bright and tangy, with bursts of brininess from the capers. Sole or flounder, with their delicate texture, are ideal for this preparation.

Before you start Equipment you'll need
  • large skillet — Provides controlled heat for pan-frying fish fillets and building lemon butter caper sauce
Safety Safety & allergen notes
  • Sole is delicate; handle gently.
  • Do not overcrowd the pan.
  • Butter burns at high heat; use medium.
Non-negotiables Rules for success
  • Dredge lightly.

Heavy coating overwhelms delicate fish; just a dusting

  • Do not move fish while cooking.

Delicate fish breaks; let it set before flipping

  • Build sauce in the pan.

Pan drippings add flavor to the sauce

  • Finish with cold butter.

Cold butter emulsifies and thickens the sauce

Piccata is traditionally made with veal or chicken.

Sole, flounder, or tilapia work well.

The sauce should be bright and lemony.
