  1. Mix the crab

    Pick through crab carefully for shell fragments. In a bowl, whisk mayonnaise, egg, mustard, Worcestershire, Old Bay, salt, and parsley. Add panko and stir. Gently fold in crab meat, being careful not to break up lumps. Divide into 8 portions and form into patties about 1 inch thick. Refrigerate 15 minutes.

    • ¼ cup mayonnaise
    • 1 egg, beaten
    • 1 tsp dijon mustard
    • 1 tsp Worcestershire
    • 1 tsp Old Bay
    • ¼ tsp salt
    • ½ cup panko
    • 2 tbsp parsley
  2. Pan-fry and serve

    Heat butter and oil in a large skillet over medium heat (325-350°F surface). When butter foams, add crab cakes. Cook 4 minutes until golden brown on bottom. Flip carefully and cook 4 minutes more until golden and heated through. Serve immediately with lemon wedges.
