Buttermilk pancakes with chai spices, cardamom, cinnamon, ginger, cloves. Indian-American brunch.

More

Before you cook

Background Recipe story & origin

Classic buttermilk pancakes meet chai spices - the coziest brunch.

Chai spiced pancakes combine American brunch with Indian chai tradition. The warm spices of masala chai-cardamom, cinnamon, ginger, and cloves-work naturally with sweet breakfast foods. Indian-American home cooks and creative brunch spots started adding these spices to pancake batter, and the combination stuck. The spices add warmth and complexity without overwhelming the familiar comfort of fluffy buttermilk pancakes. Maple syrup complements the spices; pistachios add crunch and color.

Before you start Equipment you'll need
  • griddle or large skillet — Provides even heat for cooking pancakes until golden brown and fluffy inside
Safety Safety & allergen notes
  • Medium-low heat prevents burning while cooking through.
  • Don't overmix batter; lumps are okay.
  • Flip when bubbles form and edges look set.
Non-negotiables Rules for success
  • Don't overmix the batter.

Overmixing develops gluten and makes tough, dense pancakes

  • Use fresh spices.

Stale spices taste dusty; fresh cardamom especially makes a difference

  • Let batter rest briefly.

Resting allows bubbles to form and gluten to relax

  • Cook on medium-low heat.

Lower heat cooks evenly without burning the spiced batter

  1. Make the batter

Whisk flour, sugar, baking powder, baking soda, salt, cardamom, cinnamon, ginger, and cloves in a large bowl. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla. Pour wet into dry and stir until just combined - lumps are okay. Let rest 5 minutes.

    Ingredients

    • 2 cup flour
    • 3 tbsp sugar
    • 2 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • 1 tsp cardamom
    • 1 tsp cinnamon
    • ½ tsp ginger
    • ¼ tsp cloves
    • 1.75 cup buttermilk
    • 2 eggs
    • 4 tbsp butter, melted
    • 1 tsp vanilla
  2. Cook the pancakes

Heat griddle or large skillet over medium-low heat (275-300°F surface). Add a little butter. Pour 1/4 cup batter per pancake. Cook until bubbles form on surface and edges look set, 2 to 3 minutes. Flip and cook 1 to 2 minutes more until golden. Repeat with remaining batter, adding butter as needed.

    Equipment

    Ingredients

    • 2 tbsp butter
  3. Add the final drizzle

Chef's notes

Cardamom is the star; don't skimp on it.

Warm maple syrup makes a big difference.

Add a dollop of whipped cream for extra indulgence.

These freeze and reheat well.
